  • 1 c. chunky peanut butter
  • 1 c. confectioner’s sugar
  • 8 oz. vegan semi-sweet chocolate chips melted

Instructions
 

  • Gather all ingredients and line a baking sheet with parchment paper; set aside.
  • In a large mixing bowl, combine the 3 cups of sugary cereal, 1 cup of chunky peanut butter, and 1 cup of confectioner’s sugar.
  • Mix thoroughly with a sturdy rubber spatula or your hands until all ingredients are well incorporated and a uniform, cohesive mixture forms.
  • Using a small scoop or your hands, roll the mixture into uniform, bite-sized balls, approximately 1 inch in diameter.
  • Place the formed truffles onto the prepared parchment-lined baking sheet.
  • Melt the 8 oz. of vegan semi-sweet chocolate chips using a double boiler or in a microwave-safe bowl in 30-second intervals, stirring until completely smooth.
  • Dip each truffle into the melted chocolate, ensuring it is fully coated. Lift with a fork, allowing any excess chocolate to drip back into the bowl.
  • Return the chocolate-coated truffles to the parchment-lined baking sheet.
  • If desired, immediately after dipping, sprinkle with additional crushed cereal, sea salt, or sprinkles for garnish.
  • Chill the truffles in the refrigerator for at least 30 minutes, or until the chocolate has fully set and hardened, then serve.

Notes

For optimal texture, slightly crush about half of the cereal before mixing, leaving the other half in larger pieces for a satisfying crunch. When melting the chocolate, do so gently over a double boiler or in short bursts in the microwave, stirring frequently to prevent scorching or seizing. Ensure your truffles are well-chilled before dipping them to maintain their shape and prevent them from melting into the warm chocolate. A tiny pinch of sea salt added to the truffle mixture can beautifully balance the sweetness. Consider rolling the finished truffles in finely crushed cereal, cocoa powder, or sprinkles for an elevated presentation and added flavor dimension.
