Ingredients

  • 1 pound tomatillos husked
  • ½ cup finely chopped onion
  • 1 serrano chile pepper minced
  • 1 teaspoon minced garlic
  • 2 tablespoons chopped cilantro
  • 1 tablespoon chopped fresh oregano
  • 1 ½ teaspoons salt or to taste
  • ½ teaspoon ground cumin
  • 2 cups water

  • Place tomatillos, onion, chile pepper, and garlic into a large saucepan; season with cilantro, oregano, salt, and cumin. Pour in water and bring to a boil over high heat; reduce heat to medium-low and simmer until the tomatillos are soft, 10 to 15 minutes. Dotdash Meredith Food Studios

Notes

For a deeper, smoky flavor profile, consider roasting the tomatillos and serrano chile under a broiler or on a comal until slightly charred and softened before simmering. This adds complexity and mellows the raw edge. Ensure the tomatillos are fully cooked; undercooked tomatillos can impart a bitter taste. When blending, always start with less liquid and gradually add more from the cooking pot until your desired consistency is achieved. A final squeeze of fresh lime juice will brighten the salsa, enhancing its vibrant flavor. Taste and adjust seasoning post-blending, as flavors can change once pureed.
