  • 1 1.25 ounce package taco seasoning mix
  • 1 10 ounce can diced tomatoes and green chiles (such as RO*TEL®)
  • 2 tablespoons taco sauce or to taste
  • 1 16 ounce can refried beans, warmed
  • 1 8 ounce container sour cream

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly coat a 9x13-inch casserole dish with cooking spray.
  • Brown the ground beef in a large skillet over medium-high heat, breaking it apart, until fully cooked. Drain off any excess fat.
  • Stir in the 0.75 cup water, taco seasoning mix, diced tomatoes and green chiles (undrained), and taco sauce into the cooked beef.
  • Bring the mixture to a simmer and cook for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  • Meanwhile, warm the refried beans in a microwave-safe bowl for 1-2 minutes, stirring until soft and easily spreadable.
  • Spread the warmed refried beans evenly across the bottom of the prepared casserole dish.
  • Spoon the seasoned ground beef mixture over the refried beans, spreading it out into an even layer.
  • Carefully dollop and spread the sour cream over the beef layer, creating a smooth, even topping.
  • Bake for 25-30 minutes, or until the casserole is heated through and bubbly around the edges.
  • Remove from the oven and let stand for 5 minutes before serving. Serve hot, optionally with tortilla chips.

Notes

Ensure ground beef is thoroughly browned and excess fat is drained to prevent a greasy final product. Warming the refried beans slightly before spreading makes them much easier to work with, ensuring an even layer at the base. While assembling, avoid vigorously mixing the sour cream into the beef layer; keep it a distinct, creamy topping for textural contrast. For an enhanced flavor, consider using a high-quality taco seasoning or making your own blend.
