  • 3 ½ cups rolled oats
  • ½ cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup cooked and mashed sweet potato
  • 1 cup milk
  • 2 large eggs lightly beaten
  • ¼ cup vegetable oil

Instructions
 

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking pan.
  • Mix oats, brown sugar, baking powder, salt, cinnamon, and nutmeg together in a bowl until well combined.
  • Mix potatoes, milk, eggs, and oil together in a separate bowl until well combined. Add sweet potatoes to oats and mix until well combined. Spread evenly in the prepared baking dish.
  • Bake in the preheated oven until oatmeal sets, and top is golden brown, about 30 minutes.

Notes

For a richer flavor profile, consider roasting the sweet potato until caramelized before mashing. This deepens its natural sweetness and adds complexity. To enhance texture, fold in toasted chopped pecans or walnuts with the dry ingredients, or a handful of dried cranberries. Avoid overmixing once wet and dry ingredients are combined; mix just until moistened to maintain a tender crumb. Ensure the baking pan is adequately greased for easy serving. This dish is excellent served warm with a drizzle of maple syrup or a dollop of Greek yogurt for added richness and tang.
