  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • dash of salt
  • 1/4 cup 115 grams unsalted butter, softened to room temperature
  • 1/4 cup 100 grams granulated sugar
  • 1/3 cup 50 grams brown sugar
  • 2 large eggs beaten
  • 1 teaspoons pure vanilla extract
  • 1 cup mashed banana about 2 large ripe bananas

Instructions
 

  • Preheat your oven to 350°F (175°C) or your air fryer to 325°F (160°C). Grease and flour a standard loaf pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the pure vanilla extract until well combined.
  • Fold in the mashed bananas gently until just incorporated into the wet mixture.
  • Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined and no streaks of flour remain. Be careful not to overmix.
  • Pour the batter into the prepared loaf pan, spreading evenly.
  • Bake for 50-60 minutes in the oven, or 30-40 minutes in the air fryer, until a wooden skewer inserted into the center comes out clean.
  • Let the banana bread cool in the pan on a wire rack for 10-15 minutes before inverting it onto the rack to cool completely.
  • Slice and serve your delicious banana bread.

For optimal flavor, ensure your bananas are very ripe, with plenty of brown spots; this enhances sweetness and moisture. Avoid overmixing the batter once wet and dry ingredients are combined, as it develops gluten and can lead to a tough, dense bread. Mix just until no dry streaks remain. If using an air fryer, be mindful that cooking times and temperatures may vary, and a smaller, air-fryer-safe loaf pan will be required. Always test doneness with a skewer.
