  • 2 cups strawberries hulled and sliced
  • 1 cup unsweetened low-fat yogurt
  • 3 tablespoons honey
  • 1 teaspoon lemon juice

Instructions
 

  • Wash the strawberries, hull them, and slice into pieces.
  • In a blender or food processor, combine the sliced strawberries, unsweetened low-fat yogurt, honey, and lemon juice.
  • Blend the mixture until smooth and well combined, or to your desired consistency.
  • Carefully pour the blended mixture into popsicle molds, leaving a small space at the top.
  • Insert popsicle sticks into the center of each mold.
  • Place the filled molds in the freezer on a level surface.
  • Freeze for at least 4-6 hours, or until completely solid.
  • To unmold, briefly run the outside of the molds under warm water.
  • Gently pull each pop out of the mold.
  • Serve immediately or store in an airtight container in the freezer.

Notes

For an extra smooth texture, strain the blended mixture through a fine-mesh sieve before pouring into molds. Adjust honey sweetness based on the ripeness of your strawberries. A pinch of salt can enhance the overall flavor profile. Consider adding a splash of vanilla extract or a tiny bit of orange zest for complexity. Greek yogurt yields a creamier pop.
