Equipment

  • 1 Mixing Bowl
  • 1 Spatula or whisk
  • 1 Baking Sheet
  • 1 Parchment Paper
  • 1 Sharp Knife for slicing strawberries

Ingredients

Main

  • 1 cup plain yogurt we use whole milk
  • 1 tablespoon maple syrup
  • 1/4 cup blueberries
  • 4 strawberries sliced

Instructions

  • Line a baking sheet with parchment paper, ensuring it lies flat.
  • In a mixing bowl, combine the plain whole milk yogurt and maple syrup.
  • Whisk or stir well until the maple syrup is fully incorporated and the mixture is smooth.
  • Pour the yogurt mixture onto the prepared baking sheet.
  • Using a spatula, spread the yogurt evenly into a thin layer, approximately 1/4 to 1/2 inch thick.
  • Carefully arrange the 1/4 cup of blueberries evenly over the yogurt layer.
  • Slice the 4 strawberries and distribute them artfully across the yogurt, ensuring even coverage.
  • Transfer the baking sheet to the freezer and freeze for a minimum of 2-3 hours, or until the yogurt is completely solid.
  • Once frozen, remove the baking sheet from the freezer.
  • Break the frozen yogurt into irregular pieces or 'bark' and serve immediately. Store any leftovers in an airtight container in the freezer.

Notes

For best results, use a full-fat plain yogurt to achieve a creamier, richer bark texture that's less prone to ice crystal formation. Greek yogurt can also be used for an even thicker, protein-rich base, but it might require a touch more maple syrup to balance the tartness. Ensure your baking sheet is perfectly flat to allow for even spreading and freezing. For an enhanced flavor profile, consider a hint of vanilla extract or a pinch of lemon zest in the yogurt mixture. When breaking, a clean, sharp snap indicates proper freezing. Serve immediately from the freezer.
