Skillet Burrito Bowl

I really like taco and burrito bowls and wanted to make something at home that was quick and easy. My husband and I really like how this turned out! Spoon into bowls and top with sour cream, crushed tortilla chips, lettuce, etc.

  • 1 Spatula or wooden spoon For cooking and stirring

  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 tablespoon fajita seasoning
  • 1 15 ounce can pinto beans, drained and rinsed
  • 1 8 ounce jar salsa
  • 1 cup cooked brown rice
  • ½ cup shredded Mexican cheese blend

Instructions
 

  • Heat oil in a large skillet over medium-high heat. Cook and stir beef in hot oil until browned and crumbly, 5 to 10 minutes; drain and discard grease. Stir in fajita seasoning until ground beef is evenly coated.
  • Add pinto beans, salsa, and brown rice to ground beef mixture; mix until well combined. Top with Mexican cheese blend.

Notes

To elevate this simple dish, consider browning the ground beef aggressively to develop deep maillard flavors before draining. For an extra layer of complexity, sauté finely diced onions and bell peppers with the beef. Always taste and adjust seasoning; a squeeze of fresh lime juice at the end brightens the entire bowl. Don't overcook once the beans, salsa, and rice are added, as they just need to be heated through. Fresh toppings like avocado, cilantro, or a dollop of Greek yogurt (instead of sour cream for a lighter option) will enhance both flavor and presentation.
