Simple Vegan Garlicky Potatoes

Great for Thanksgiving or any time! It has garlic, it's smooth, and it's vegan. Serve with mushroom gravy!

  • 1 Large Pot For boiling potatoes
  • 1 Colander For draining
  • 1 Potato Masher or Large Spoon For mashing/stirring
  • 1 Chef's knife For peeling and cutting
  • 1 Cutting Board

Ingredients

  • 4 pounds potatoes peeled and cut into chunks
  • 4 cups water
  • 2 cups vegetable broth
  • 4 cloves garlic thinly sliced, or more to taste
  • 1 cup rice milk or as needed

Instructions
 

  • Combine potatoes, water, broth, and garlic in a pot. Bring to a boil; reduce heat to medium-low and cook until soft, about 15 minutes.
  • Drain potatoes and reserve cooking water. Return potatoes to the pot and stir over medium heat until any excess moisture is cooked off, about 1 minute.
  • Remove pot from heat. Add some reserved cooking water and rice milk, alternating between them, while stirring vigorously. Stop before potatoes become too soggy or liquid begins to accumulate in the pot.

Notes

1. For an even smoother and less gummy texture, consider using a potato ricer or food mill instead of vigorous stirring. Over-mashing can release too much starch.2. Seasoning is crucial; don't forget salt and freshly cracked white pepper to enhance the garlic flavor. A pinch of nutritional yeast can add an umami depth.3. To deepen the garlic flavor, you could gently sauté the sliced garlic in a little vegan butter or olive oil before adding it to the pot, or even roast a head of garlic to incorporate into the mash.4. Finishing with a swirl of quality olive oil or a pat of vegan butter at the end can add richness and a beautiful sheen.
