  • 1 lb shrimp shelled, de-veined
  • 2 avocados cubed
  • 1 tomato diced
  • 1/2 red onion diced
  • 1/2 bunch cilantro coarsely chopped
  • 2 limes
  • 3 garlic cloves
  • 2 tablespoons coarse sea salt
  • 1 tablespoon olive oil

Instructions
 

  • Prepare all vegetables: dice the tomato and red onion.
  • Coarsely chop the cilantro.
  • Mince the garlic cloves.
  • Peel and cube the avocados, setting aside for later.
  • Ensure shrimp is shelled and de-veined. If using cooked shrimp and they are large, you may chop them into bite-sized pieces.
  • In a large mixing bowl, combine the prepared shrimp, diced tomato, diced red onion, minced garlic, and chopped cilantro.
  • Add the coarse sea salt and olive oil to the bowl.
  • Juice the limes directly over the ingredients in the bowl.
  • Gently mix all ingredients together until evenly coated.
  • Cover the bowl and refrigerate for at least 15-30 minutes (or several hours if acid-cooking raw shrimp) to allow flavors to meld. Just before serving, gently fold in the cubed avocado, taste, and adjust seasoning if needed.

Notes

Ensure all vegetables and herbs are very fresh for optimal flavor and texture. If using raw shrimp for true acid-cooked ceviche, confirm they are sushi-grade and extremely fresh, marinating for several hours until opaque. If using pre-cooked shrimp (common for this style), a shorter marination of 15-30 minutes is sufficient for flavors to meld. Add the cubed avocado just before serving to prevent browning and maintain its texture. Serve chilled, perhaps with tostadas or tortilla chips.
