A damp cutting board prevents sticking while rolling. Ensure your shrimp filling is completely cooled before assembling the rolls; warm filling can cause the wrappers to tear or become too soft. Don't overstuff the rolls; a moderate amount of filling ensures a tight, neat roll and prevents tearing. The DIY bar concept is excellent for parties, allowing guests to customize their rolls.
