  • 2 small cucumbers thinly sliced
  • ½ small red onion thinly sliced
  • 1 large tomato halved and sliced
  • 3 tablespoons mayonnaise
  • 1 tablespoon white vinegar
  • ¼ teaspoon salt
  • ½ teaspoon ground black pepper

  • In a medium bowl, toss together cucumbers, red onion, and tomato. Gently stir in mayonnaise, vinegar, salt, and pepper until coated. Cover and refrigerate for at least 1 hour before serving.

Notes

For optimal texture, consider a light salting and draining of the sliced cucumbers for 15-20 minutes before mixing, especially if they are very watery. This prevents the salad from becoming diluted. Enhance the flavor profile by adding fresh herbs like dill or parsley. A touch of sugar can balance the acidity of the vinegar and mayonnaise.
