Perfect Ten Baked Cod

This baked cod recipe is simple, fast, and delicious. The fish is baked in butter, then topped with lemon juice, white wine, and buttery crackers for the perfect ten dinner. This dish is a favorite of ours from a local restaurant. Serve with rice pilaf and sautéed spinach with garlic. Yummy!

Ingredients

  • 4 tablespoons butter divided
  • ½ sleeve buttery round crackers such as Ritz®, crushed
  • 1 pound thick-cut cod loin
  • ½ medium lemon juiced
  • ¼ cup dry white wine
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped green onion
  • 1 medium lemon cut into wedges

Instructions
 

  • Gather all ingredients. Preheat the oven to 400 degrees F (200 degrees C). Dotdash Meredith Food Studios
  • Place 2 tablespoons butter in a microwave-safe bowl. Melt in the microwave on high, about 30 seconds. Stir buttery round crackers into melted butter. Dotdash Meredith Food Studios
  • Place remaining 2 tablespoons butter in a 7x11-inch baking dish. Melt in the preheated oven, 1 to 3 minutes. Remove dish from oven. Coat both sides of cod in melted butter in the baking dish. Dotdash Meredith Food Studios
  • Bake cod in the preheated oven for 10 minutes. Remove from oven; top with lemon juice, wine, and cracker mixture. Return to the oven and bake until fish is opaque and flakes easily with a fork, about 10 more minutes. Dotdash Meredith Food Studios

For optimal results, select thick-cut, fresh cod loin to prevent drying. Avoid overcooking; cod is delicate and becomes tough when overdone. The cracker topping provides texture; consider toasting the crushed crackers lightly before mixing with butter for an even crispier crust. A touch of lemon zest with the juice will elevate the citrus brightness. For a richer flavor, infuse the melting butter with a crushed garlic clove or a pinch of smoked paprika. Ensure the baking dish is adequately buttered to prevent sticking and aid in browning the fish. Serve immediately to enjoy the crisp topping and moist fish. A dry white wine, like Sauvignon Blanc, will complement the fish beautifully.
