Notes

For the best Bellini, use ripe, juicy peaches; a perfectly smooth puree is key to prevent grittiness. Strain the puree through a fine-mesh sieve if desired for an extra-silky texture. Ensure both the peach puree and Prosecco are thoroughly chilled for optimal refreshment. While Prosecco is traditional, a dry Cava or even a good quality Champagne can be substituted. Avoid over-stirring once the Prosecco is added, as this will diminish the effervescence. Garnish just before serving.
