  • 1 cup sugar
  • 3/4 cup fresh lime juice from about 5 limes
  • 3/4 cup light rum
  • 1/2 cup lightly packed fresh mint leaves
  • 1 1/2 cups ginger ale

Instructions
 

  • In a saucepan, combine water and sugar. Bring to a simmer over medium heat, stirring until sugar is fully dissolved. Let cool completely to create simple syrup.
  • Gently muddle the fresh mint leaves in a large pitcher or bowl to release their aromatic oils.
  • Add the cooled simple syrup, fresh lime juice, and light rum to the pitcher with the muddled mint. Stir well to combine.
  • Cover the pitcher or transfer the mixture to a freezer-safe container. Freeze for at least 4-6 hours, or until partially frozen and slushy, stirring occasionally to break up ice crystals.
  • Once slushy, transfer the mixture to a blender.
  • Add the ginger ale to the blender.
  • Blend until smooth and a uniform slush consistency is achieved. Add more ginger ale if too thick, or a bit of ice if too thin.
  • Pour into serving glasses.
  • Garnish with fresh mint sprigs and lime wedges, if desired.
  • Serve immediately.

For the best flavor, always use freshly squeezed lime juice and high-quality fresh mint; avoid over-muddling the mint, as it can release bitter compounds – a gentle bruise is sufficient. When making the simple syrup, ensure the sugar is fully dissolved for a smooth consistency. The long chilling time is crucial for developing the slush texture; periodically scraping or stirring during freezing can help prevent it from becoming a solid block.
