Notes

Achieving a perfect coating is key for these sugared pecans; ensure the egg white mixture is well-combined before adding the nuts. Stirring every 10 minutes during baking is crucial to prevent burning and ensure even caramelization and crispness. For easier cleanup and to prevent sticking, consider using parchment paper instead of aluminum foil, or spray the foil with non-stick spray, especially if the butter pools. A pinch of fine sea salt can elevate the flavor by balancing the sweetness, and a touch of vanilla extract can add depth. Ensure pecans cool completely on the sheet; they will crisp up significantly as they cool.
