  • 1 pound ground beef
  • 1 green bell pepper chopped
  • 1 package taco seasoning mix
  • 1 tomato chopped
  • 1 bunch green onions chopped
  • 2 tablespoons hot taco sauce or more to taste
  • 1 16 ounce container sour cream
  • 1 8 ounce package shredded sharp Cheddar cheese
  • 1 14.5 ounce package tortilla chips, or more as needed

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir bell pepper and taco seasoning into ground beef. Spread ground beef mixture into prepared casserole dish.
  • Sprinkle tomato and green onions over ground beef mixture; top with taco sauce. Spread sour cream over taco sauce layer and top with Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbling, 10 to 20 minutes. Serve with tortilla chips.

Notes

1. Achieving a deep sear on the ground beef before draining is crucial for robust flavor. Don't rush this step. Consider using a lean ground beef to minimize excess grease. 2. Enhance the taco seasoning by adding a pinch of smoked paprika and a touch of cumin for depth. 3. For an extra layer of flavor and texture, mix a small amount of cream cheese into the sour cream before spreading; it also helps prevent the sour cream from separating during baking. 4. A blend of cheeses, such as Monterey Jack with the Cheddar, can offer a more complex melt and flavor profile. 5. Garnish with fresh cilantro or a squeeze of lime juice after baking for brightness.
