  • 2/3 Cup Fat Free Skim Milk
  • 2 Tbsp Orange Zest
  • 2 Cups Raw Strawberries
  • 16 Tbsp Whipped Cream
  • 1/4 Cup Powdered Sugar

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Wash and hull the raw strawberries, then slice them. In a small bowl, combine the sliced strawberries with the powdered sugar and set aside to macerate.
  • In a medium mixing bowl, combine the Bisquick Pancake Baking Mix, fat-free skim milk, and orange zest. Mix gently until just combined; do not overmix.
  • Drop spoonfuls of the batter onto an ungreased baking sheet to form 8 individual shortcakes.
  • Bake for 10-12 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  • Remove the shortcakes from the oven and transfer them to a wire rack to cool completely.
  • Once cooled, carefully split each shortcake in half horizontally.
  • Place the bottom half of a shortcake on a serving plate.
  • Spoon a generous amount of the macerated strawberries over the bottom half, then top with 2 tablespoons of whipped cream.
  • Cover with the top half of the shortcake and serve immediately.

For the best shortcake texture, avoid overmixing the Bisquick batter; mix just until combined. The orange zest is crucial as it brightens the flavor profile of the shortcake and complements the strawberries beautifully. Consider macerating the sliced strawberries with a tablespoon of granulated sugar and a squeeze of orange juice for 15-20 minutes before assembly to draw out their juices and intensify their sweetness. When assembling, ensure the shortcakes are fully cooled to prevent the whipped cream from melting. A touch of fresh mint as a garnish can elevate the visual appeal.
