  • 3 tablespoons mayonnaise
  • 2 teaspoons prepared mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon celery salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon paprika
  • 5 drops hot pepper sauce
  • 1 pinch caraway seeds or to taste
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped celery

Instructions
 

  • Combine ham, mayonnaise, mustard, garlic powder, onion powder, celery salt, black pepper, paprika, hot pepper sauce, and caraway seeds in a large bowl.
  • Purée ham mixture using an immersion blender or food processor until reaches desired texture. Stir in onion and celery. Refrigerate until chilled before serving.

Notes

1. For the best flavor and texture, use high-quality cooked ham, ideally from a roasted ham joint. Leaner cuts will result in a drier spread, so a good balance of fat is beneficial.2. When puréeing, aim for a slightly coarse texture; avoid over-processing into a paste, as some texture adds to the appeal. A few small bits of ham provide a more satisfying mouthfeel.3. Adjust the hot pepper sauce and caraway seeds to taste. A dash of Worcestershire sauce can also add depth.4. Allow ample chilling time for the flavors to meld and for the spread to firm up, enhancing both taste and spreadability.
