Equipment

  • 1 Air Fryer
  • 1 Mandoline or Sharp Knife For thin, even slices
  • 1 Peeler For plantains
  • 1 Mixing Bowl
  • 1 Tongs For tossing and flipping

Ingredients

Main

  • 2 whole plantains
  • avocado oil spray
  • sprinkle salt
  • sprinkle paprika and/or red chili powder

Instructions

  • Peel the plantains: Trim the ends, score along the length of the peel, and carefully remove it.
  • Slice the plantains: Using a mandoline or very sharp knife, slice the plantains into thin, even rounds, ideally about 1/16 to 1/8 inch thick.
  • Oil the plantains: Place the sliced plantains in a mixing bowl and lightly spray with avocado oil, tossing gently to ensure an even coating.
  • Season the plantains: Season generously with salt, and if desired, a sprinkle of paprika and/or red chili powder. Toss again to distribute the seasonings.
  • Preheat the air fryer: Preheat your air fryer to 375°F (190°C) for a few minutes.
  • Arrange in air fryer: Arrange the seasoned plantain slices in a single layer in the air fryer basket, ensuring they do not overcrowd. Cook in batches if necessary.
  • Air fry: Air fry for 8-10 minutes, shaking the basket or flipping the chips halfway through, until they are golden brown and crispy. Adjust time based on thickness and air fryer model.
  • Cool the chips: Remove the chips from the air fryer and transfer them to a wire rack to cool completely. They will crisp up further as they cool.
  • Serve: Serve immediately as a healthy snack or side dish.

Notes

Achieving truly crispy plantain chips relies heavily on uniform, thin slices; a mandoline is highly recommended for consistency. For savory chips, use firm, green plantains, which are starchy and less sweet. If you prefer a sweeter profile, slightly riper yellow plantains can be used, though they may yield a softer chip. Ensure the air fryer basket is not overcrowded to allow for proper air circulation, cooking in batches if necessary. A light spray of oil is sufficient; too much oil can make them greasy. Season immediately after cooking for best adherence and flavor. The chips will crisp further as they cool.
