  • 1 pound ground beef
  • 1 1.25 ounce package taco seasoning mix
  • 1 10.5 ounce can condensed tomato soup
  • 3 ¾ cups water
  • 1 cup chopped onion
  • 4 carrots chopped
  • 3 potatoes peeled and cubed
  • 1 stalk celery chopped
  • 1 15 ounce can pork and beans

Instructions
 

  • Sauté ground beef in a large pot over medium-high heat. Add taco seasoning, condensed soup, water, onion, carrots, potatoes, celery, and beans. Reduce heat to low. Cover and simmer until the vegetables are tender, about 30 minutes.

Notes

1. Achieving a deep, rich flavor starts with properly browning the ground beef. Ensure it's well-caramelized before adding other ingredients; this creates a flavorful foundation. Deglazing the pot with a splash of water or broth after draining fat will capture all those delicious browned bits.2. Chop all vegetables (carrots, potatoes, onion, celery) to a uniform, bite-sized consistency. This ensures even cooking and a consistent texture throughout the stew.3. Taco seasoning can vary in intensity. Taste the stew before serving and adjust seasoning as needed, perhaps with a pinch more salt, chili powder, or cumin. A squeeze of fresh lime juice or a sprinkle of chopped cilantro at the end can brighten the flavor profile.
