  • 4 shots orange-flavored liqueur recommended: Grand Marnier
  • 4 teaspoons honey
  • 4 fresh strawberries tops trimmed
  • 1 bottle Champagne well chilled

Instructions
 

  • Add the orange-flavored liqueur, honey and strawberries to a food processor and process until smooth. Fill the chilled glasses halfway with the strawberry mixture and then fill the rest of the glass with Champagne.

1. Quality of ingredients is paramount: Use a good quality orange-flavored liqueur and a well-chilled, dry sparkling wine or Champagne. The better the base, the better the cocktail.2. For an exceptionally smooth purée, pass the strawberry mixture through a fine-mesh sieve after processing to remove any remaining pulp or strawberry seeds. This enhances the mouthfeel.3. Ensure all components are well chilled, especially the Champagne. This maintains the crispness and effervescence of the drink.4. Adjust honey to taste, depending on the sweetness of the strawberries and your preference. A touch of fresh lemon or lime juice could brighten the strawberry mixture if desired, but add sparingly.5.
