Notes

For optimal flavor, use high-quality chocolate chips; a mix of semi-sweet and dark chocolate can provide a more balanced sweetness. Be mindful not to overbake, as chocolate can seize or become grainy if exposed to excessive heat. Monitor the marshmallows closely during baking. They can go from perfectly golden to burnt very quickly. For an extra crisp, torched top without overcooking the chocolate, consider finishing under a broiler for 30-60 seconds, or using a kitchen torch after removing from the oven. Serve this dip immediately while warm and utterly gooey. For an elevated experience, slightly warm the graham crackers before serving to maintain the warmth and prevent the dip from cooling too quickly upon contact. A sprinkle of flaky sea salt over the finished dip dramatically enhances the chocolate and marshmallow flavors. A pinch of cinnamon or a few drops of vanilla extract (mixed with the chocolate chips before baking) can also add a delightful complexity.
