Golden puffed pastries are filled with a feta cheese mixture. These can be made ahead, and popped into the oven after your guests arrive.

  • 2 Small Mixing Bowls One for the filling, one for egg wash.
  • 1 Sharp Knife For cutting pastry and green onions.

  • 8 ounces feta cheese crumbled
  • 3 tablespoons finely chopped green onions
  • 1 egg beaten
  • 1 17.5 ounce package frozen puff pastry, thawed
  • 1 egg yolk beaten with 1 teaspoon water

Notes

For best results, ensure your puff pastry is properly thawed but still cold when working with it; this preserves its flakiness. Overworking or warming the pastry too much can inhibit its ability to puff. Consider adding a pinch of dried oregano or a touch of fresh dill to the feta mixture for an enhanced Mediterranean flavor profile. A secure seal on the edges is crucial to prevent the cheese filling from leaking out during baking, so press firmly with your fork. The egg wash provides that beautiful golden sheen, so apply it evenly without letting it pool at the edges, which can seal layers and prevent puffing.
