Easy White Chicken Enchiladas

This is a great 'guy' recipe, because you simply mix, assemble, top and bake; and it's a big hit on the table. It doesn't require lots of prep work, just a minimum of measuring of ingredients found in any grocery store. She will think you slaved all afternoon!

Ingredients

  • 4 ounces cream cheese softened
  • ½ cup sour cream
  • ½ cup green salsa
  • 2 6 ounce packages seasoned cooked chicken cubes
  • 1 cup shredded Mexican-style cheese blend
  • 1 ½ cups white cheese sauce or queso dip
  • 6 8 inch flour tortillas

Instructions
 

  • Preheat oven to 375 degrees F (190 degrees C). Lightly spray an 8x8-inch glass baking dish with cooking spray.
  • Stir together the softened cream cheese, sour cream, and salsa until blended. Fold in chicken and shredded cheese. Spread a small amount of white cheese sauce onto the bottom of the baking dish. Evenly divide the filling among the tortillas, and roll into firm cylinders. Place into prepared baking dish and cover with remaining sauce.
  • Bake in preheated oven until golden and bubbly, about 30 minutes. Allow to rest 5 minutes before serving.

Notes

Ensure cream cheese is truly softened to room temperature for a smooth, homogenous filling without any lumps. For an elevated flavor, consider using freshly cooked and shredded chicken breast instead of pre-packaged cubes; it offers better texture and juiciness. Gently warm the flour tortillas before filling (e.g., microwave for 15-20 seconds) to make them more pliable and prevent tearing when rolling. To enhance the white cheese sauce, a pinch of ground cumin or a dash of hot sauce can add depth and complexity. Do not skip the resting time after baking; it allows the enchiladas to set, making them much easier to portion and serve without falling apart.
