  • 2 medium zucchini trimmed
  • 2 large eggs beaten
  • 1 sleeve buttery round crackers such as RitzĀ®, crushed
  • 2 tablespoons olive oil or as needed
  • salt and ground black pepper to taste

Instructions
 

  • Cut zucchini crosswise into 1/2-inch slices.

For optimal texture, slice zucchini to a uniform 1/2-inch thickness; this ensures even cooking. Enhance the cracker coating by incorporating finely chopped fresh parsley or a pinch of garlic powder. When frying, maintain a medium heat and avoid overcrowding the pan to keep the oil temperature consistent and ensure a crisp, golden crust without burning. After frying, immediately transfer the zucchini to a wire rack over paper towels to drain excess oil, preventing sogginess.
