This chipped beef recipe is straight from my mom. We called it SOS (Same Ole Stuff), and it's great comfort food! It's easy to make and tastes great with a cold beer.

  • 1 ½ cups warm milk
  • 1 8 ounce jar dried beef, chopped
  • 1 pinch cayenne pepper

Notes

For a truly smooth sauce, ensure your roux (butter and flour) cooks for at least 1-2 minutes to eliminate any raw flour taste before gradually incorporating *warm* milk while whisking constantly. This prevents lumps and creates a velvety béchamel base. The dried beef can be briefly pan-fried to deepen its savory notes before adding to the sauce.
