Notes

Ensure the ice cream is softened just enough to be scoopable and mixable, but not melted, for the correct consistency. Overmixing will result in a runny texture. For extra flavor, consider swirling in a tablespoon or two of creamy peanut butter before adding the cookies. If crushing whole cookies, place them in a zip-top bag and crush with a rolling pin or bottom of a heavy pan.
