  • 1 small onion chopped
  • 2 cloves garlic. minced
  • 2 teaspoon dried oregano
  • 2 teaspoon ground cumin
  • 3 15 ounce cans cannellini beans, divided
  • 2 10 ounce cans mild diced tomatoes with green chilies, such as Ro*TELĀ®
  • 1 15 ounce can whole kernel corn
  • 1 15 ounce can cream style corn
  • 1 15 ounce can seasoned black beans
  • 3 cups shredded cooked chicken
  • 2 tablespoon lime juice
  • tri-color tortilla strips for garnish

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  • Stir in minced garlic, dried oregano, and ground cumin; cook for 1 minute until fragrant.
  • Drain and rinse two cans of cannellini beans, then add them to the pot and mash them with a potato masher until mostly smooth.
  • Add the remaining undrained can of cannellini beans, diced tomatoes with green chilies, whole kernel corn, cream style corn, and seasoned black beans to the pot.
  • Stir well to combine all ingredients. Bring the soup to a simmer.
  • Reduce heat to low, cover, and let the soup simmer for at least 10 minutes to allow flavors to meld.
  • Stir in the shredded cooked chicken and lime juice. Continue to cook until the chicken is heated through, about 2-3 minutes.
  • Taste and adjust seasoning if needed, adding salt or pepper to your preference.
  • Ladle the hot soup into individual serving bowls.
  • Garnish generously with tri-color tortilla strips before serving.

To deepen the flavor, briefly toast the oregano and cumin with the onions and garlic; this blooming of spices enhances their aromatic compounds. Mash two cans of cannellini beans directly in the pot to naturally thicken the soup, providing a creamy texture without dairy. Ensure the shredded chicken is added towards the end to simply heat through, preventing it from becoming tough. Adjust lime juice to taste at the very end; it adds crucial bright acidity that elevates all the other flavors. For authentic presentation, don't skip the tri-color tortilla strips, and consider fresh cilantro or avocado for added flair.
