  • 1 cup butter plus more for the pan
  • 2 cups all-purpose flour plus more for the pan
  • 2 cups granulated sugar
  • 2 tablespoons cocoa powder
  • 1 cup cola soft drink such as Coca-Cola
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 2 eggs lightly beaten
  • 1 tablespoon pure vanilla extract
  • 1 1/2 cups miniature marshmallows
  • 1/2 cup butter
  • 3 tablespoons cocoa powder
  • 6 tablespoons cola soft drink such as Coca-Cola
  • One 16-ounce package confectioners’ sugar sifted
  • 1/2 teaspoon vanilla extract

Instructions
 

  • For the cola cake: Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-inch pan.
  • Sift flour and granulated sugar in a bowl. Heat butter, cocoa powder and cola to a boiling point in a small pan. Pour over flour/sugar mixture. Add buttermilk, baking soda, eggs, vanilla and marshmallows (the batter will be thin and the marshmallows will float to the top). Pour batter into prepared pan. Bake until cake is cooked, 30 to 35 minutes.
  • For the chocolate cola icing: Combine butter, cocoa, cola, confectioners' sugar and vanilla in a pan and heat until it comes to a boil.
  • Poke holes in the cake while it's still hot and pour the icing over the cake. Cut into squares and serve warm from the cake pan.

Notes

For a consistently smooth cake and icing, ensure all dry ingredients are properly sifted. The cake batter's thin consistency is normal due to the cola and buttermilk; don't worry if the marshmallows float. For the icing, sifting confectioners' sugar is crucial to avoid lumps. Pour the hot icing over the cake immediately after poking holes to allow maximum absorption, resulting in a deliciously moist, flavorful dessert. Serving warm enhances the gooey marshmallow texture and overall indulgence.
