  • 10 ounces boneless skinless chicken thighs, trimmed of fat and diced into 1/4-inch cubes
  • ½ cup Italian-seasoned bread crumbs
  • ¼ cup chopped onion
  • ¼ cup shredded mozzarella cheese
  • 1 egg
  • ¼ cup mayonnaise
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 2 tablespoons vegetable oil

Instructions
 

  • Mix chicken, bread crumbs, onion, mozzarella cheese, egg, mayonnaise, salt, pepper, and garlic powder in a bowl until well combined. Shape mixture into 8 equal-sized patties.
  • Heat oil in a large skillet. Fry patties until lightly browned, about 5 minutes. Flip and fry for an additional 3 to 5 minutes. Transfer fritters to a paper towel-lined plate.

Notes

1. Ensure chicken is diced uniformly (1/4-inch) for even cooking. Overly large pieces will cook inconsistently or dry out the exterior while the interior is still raw. 2. Do not overcrowd the skillet during frying; this lowers the oil temperature, leading to greasy, less crispy fritters. Fry in batches if necessary. 3. For enhanced flavor, consider adding a tablespoon of finely chopped fresh parsley or chives to the mixture. A pinch of smoked paprika can also add depth. 4. Serve these with a vibrant dipping sauce such as a lemon-herb aioli, spicy mayonnaise, or a sweet chili sauce to elevate the dish. 5. If you prefer a healthier option, these can be baked at 375°F (190°C) for 15-20 minutes, flipping halfway, until golden and cooked through. Lightly mist with cooking spray before baking for a crisper exterior.
