Equipment

  • 1 Saucepan
  • 1 Whisk
  • 1 Citrus Juicer
  • 1 Large Pitcher
  • 1 Measuring Cups and Spoons

Ingredients

Main

  • 1/2 cup sugar
  • 1/2 cup water
  • 7 limes juiced (or at least 1/2 cup)
  • 5 tablespoons cherry syrup from maraschino cherry jar
  • 1 & 1/2 liters seltzer water I prefer to use orange-flavored, but plain is fine
  • ice cubes
  • maraschino cherries limes or orange slices for garnish (optional)

Instructions

  • In a small saucepan, combine the sugar and water. Heat over medium-low heat, stirring constantly, until the sugar is completely dissolved. Remove from heat and let cool completely.
  • Juice the limes until you have at least 1/2 cup of fresh lime juice.
  • In a large pitcher or serving carafe, combine the cooled simple syrup, fresh lime juice, and cherry syrup. Stir well to integrate all the flavors.
  • Fill individual serving glasses generously with ice cubes.
  • Pour the cherry-lime mixture into each glass, filling it approximately one-third to halfway, depending on desired strength.
  • Top off each glass with seltzer water; use orange-flavored for added complexity or plain for a purer cherry-lime profile.
  • Gently stir each drink to ensure the seltzer is incorporated without losing too much fizz.
  • Garnish each Cherry Lime Rickey with maraschino cherries, lime slices, or orange slices, if desired, for an appealing presentation.
  • Serve immediately and enjoy the refreshing taste.

Notes

For optimal flavor, ensure your simple syrup is fully dissolved but not over-reduced; a gentle simmer is sufficient. Freshly squeezed lime juice is paramount; bottled juice will compromise the bright, vibrant taste. While maraschino cherry syrup offers convenience, consider a homemade cherry syrup for a more sophisticated, less artificial flavor profile. When choosing seltzer, the suggested orange-flavored option introduces an additional layer of complexity; however, plain seltzer allows the cherry and lime to truly shine. For serving, chill all components thoroughly prior to mixing, and combine the seltzer just before serving to preserve its effervescence. Taste and adjust the balance of sweet and tart to suit your palate, and don't skip the garnish for a professional presentation.
