  • 1/4 cup oil
  • 1 egg
  • 1/3 cup milk
  • 1/4 cup white chocolate chips
  • 1/4 cup sprinkles if using white cake mix

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Lightly grease an 8x8 inch baking pan, and line it with parchment paper, leaving an overhang on the sides for easy removal.
  • In a large mixing bowl, combine the oil, egg, and milk, whisking until well blended.
  • Add the cake mix to the wet ingredients.
  • Mix with a spatula or whisk until just combined. Be careful not to overmix.
  • Fold in the white chocolate chips and sprinkles (if using white cake mix), distributing them evenly throughout the batter.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake for 20-25 minutes, or until the edges are lightly golden and the center is set but still slightly soft.
  • Remove the pan from the oven and let the blondies cool completely in the pan on a wire rack.
  • Once cooled, use the parchment paper overhang to lift the blondies out of the pan, slice into squares, and serve.

Notes

For best results, do not overmix the batter once the dry ingredients are added; mix just until combined to ensure a tender, chewy blondie. Baking time can vary, so keep an eye on them: blondies are done when the edges are set and lightly golden, but the center still looks slightly soft. They will continue to set as they cool. Ensure the blondies are completely cool before cutting for clean, neat squares. Feel free to experiment with different cake mix flavors, or swap white chocolate chips for dark chocolate, butterscotch, or even nuts.
