Notes

To ensure a consistently moist meatloaf, avoid overmixing the ground turkey; this can make it tough. Sautéing the onion and garlic gently before adding them to the mixture will mellow their pungency and infuse a deeper, more rounded flavor. For the glaze, a good quality ketchup and rich brown sugar create fantastic caramelization. Consider adding a pinch of smoked paprika or a dash of hot sauce to the glaze for an extra layer of complexity. After baking, allow the meatloaf to rest for 10-15 minutes before slicing; this allows the juices to redistribute, resulting in a more tender and flavorful product.
