Notes

For optimal flavor and texture, always pat your pollock fillets dry with paper towels before seasoning; this allows herbs and spices to adhere better and promotes a more even cook. Avoid overcooking at all costs, as pollock is lean and can become dry and tough quickly – it's done once it flakes easily. To enhance the creamy topping, consider adding a hint of fresh lemon zest or a dash of garlic powder. A squeeze of fresh lemon juice over the fish just before serving will brighten the entire dish and elevate its presentation alongside a sprinkle of fresh dill or chives.
