Notes

Achieving truly crispy fried pickles hinges on thoroughly drying the pickle chips before breading; excess moisture will result in a soggy coating. For an elevated texture, consider incorporating a small amount of panko breadcrumbs into your flour mixture for extra crunch. Ensure an even, thin coating of breading to prevent a gummy texture. When air frying, avoid overcrowding the basket, as this restricts air circulation and prevents even crisping; cook in multiple batches if necessary. The Sriracha-mayo offers a great kick; adjust the spice level to taste, or experiment with other aiolis like a smoky paprika aioli. Serve immediately for optimal crispness.
