3-Ingredient Peanut Butter Cookies

These 3-ingredient peanut butter cookies are one of my favorite cookies to make. They are the only peanut butter cookies my family will eat! Sprinkle a pinch of sugar on cookies before baking, if desired.

Notes

For best results, use a smooth, creamy peanut butter; natural peanut butter can be used but ensure it's well stirred. Avoid overmixing the dough, as this can develop the gluten in the peanut butter and lead to a tougher cookie. The key to a tender cookie is not to overbake; the edges should be just firm, and the centers may still look slightly soft. They will set as they cool. For an enhanced flavor profile, consider adding a pinch of flaky sea salt on top before baking, or a quarter teaspoon of vanilla extract to the dough. A tablespoon of mini chocolate chips can also be folded in for an added treat.
