In today’s fast-moving life, coming home tired and still having to figure out “aaj raat ka khana kya banega” feels like the biggest challenge of the day. We all want something that tastes like ghar ka khana, fills the stomach properly, makes the kids happy, and most importantly, doesn’t burn a hole in the pocket or take two hours to cook. The good news is that you really don’t need expensive ingredients or chef-level skills to put a smile on everyone’s face at the dinner table.
These days groceries are costly, time is short, and everyone is looking for that one magic recipe which is tasty, healthy-ish, and super quick. I have spent years collecting exactly those kinds of recipes the ones my family asks for again and again, the ones my friends copy into their phones, the ones that make you feel proud when you keep the dish on the table and everyone says “wah, yeh toh bahut accha bana hai!”
So here are my 14 absolute favorite cheap and easy dinner ideas that I personally make on repeat in my own kitchen. They are tried, tested, and loved in real Indian homes (yes, even by fussy kids and picky husbands). Let’s make weeknight dinners something you actually look forward to.

1. Easy Mexican Casserole
This is my go-to lazy dinner when I have zero energy left. I just brown some keema (or soya granules), mix in rajma, sweet corn, a bottle of salsa or even homemade tomato-onion masala, layer it with leftover rotis or tortillas, shower cheese on top and bake till bubbly. In half an hour the whole house smells like a Mexican restaurant and everyone fights for the crispy edges. Even my mother-in-law, who usually says “yeh kya foreign cheez hai,” finishes two servings without a word.
Why this dish wins every time:
- One-dish meal, almost zero cleaning
- Easily made vegetarian with soya
- Kids treat it like nachos and finish everything
- Tastes even better as next-day lunch

- Chips: Crushed tortilla chips add welcome crunch and saltiness.
- Sour cream: A layer of sour cream lends cool richness and tangy flavor.

2. Aunt Carol’s Spinach and Fish Bake
I swear this is the only way my kids eat fish and palak together without drama. I take cheap basa fillets, spread a creamy spinach mixture (just cooked palak + little cream + garlic), top with bread crumbs and cheese and bake. The fish stays juicy, the spinach disappears magically, and the golden crust is so good that my friend’s four-year-old calls it “green pizza.” Takes 10 minutes to assemble and tastes like you worked really hard.
Why you’ll make it again and again:
- Hidden veggies that nobody complains about
- Looks restaurant-level but stupidly easy
- Perfect with garlic bread or jeera rice
- Freezes beautifully for emergency nights
Aunt Carol’s Spinach and Fish Bake
Equipment
- 1 Baking Dish Small, oven-safe
- 1 Mixing Bowl Medium-sized
- 1 Fork For mixing and testing fish doneness
- 1 Spatula or Spoon For spreading the spinach mixture
- 1 Measuring Cups and Spoons Standard set
Ingredients
Main
- 1 10 ounce package frozen chopped spinach, thawed and squeezed dry
- 1 cup sharp Cheddar cheese
- ⅓ cup dry bread crumbs
- 1 egg beaten
- 1 pound cod fillets
- salt and pepper to taste
Instructions
- Preheat oven to 325 degrees F (165 degrees C).
- In a bowl, mix the spinach, 1/2 cup Cheddar cheese, about 5 tablespoons dry bread crumbs, and the egg. Spread the mixture into the bottom of a small baking dish. Arrange the cod fillets on top of the spinach mixture, and season with salt and pepper. Top with the remaining Cheddar cheese and bread crumbs.
- Cover, and bake 20 minutes in the preheated oven, or until fish flakes easily with a fork.

3. Unstuffed Cabbage Rolls
Winter evenings and this dish are made for each other. Instead of rolling patta gobi like a project, I just throw everything in one pot keema, chopped cabbage, tomatoes, little rice, some garam masala and let it simmer. The cabbage turns silky, the keema gets flavorful, and the whole thing tastes like something my Punjabi dadi would approve of. Costs barely ₹400 and feeds six hungry people easily.
Why it feels like love in a bowl:
- All the flavor, none of the rolling effort
- Cabbage becomes sweet and buttery
- Even cabbage haters clean their plate
- Perfect with soft pav or lachha paratha

- 1/2 teaspoon salt
- 1 1/2 teaspoons caraway seeds

- Add the crushed tomatoes, brown sugar, white vinegar, salt, caraway seeds, and garlic powder to the pot. Stir well to combine all ingredients.
- Bring the mixture to a simmer, then reduce heat and cook, uncovered, for 15-20 minutes, stirring occasionally, allowing the flavors to meld.
- Pour the entire mixture from the pot into a large baking dish.
- Bake in the preheated oven for 20-25 minutes, or until the casserole is heated through and bubbly.
- Remove from oven and let stand for 5-10 minutes before serving.

4. Philly Cheesesteak Sandwiches
When the kids want “burger type something,” this is what I make. Thin slices of beef or chicken, loads of shimla mirch and onion fried with little soya sauce and black pepper, piled into butter-toasted buns with melted cheese. Tastes exactly like the huge sandwiches you get at those fancy cafes, but costs ₹150 per person max. My husband says it’s better than anything he ate in America!

10. Classic Reuben Sandwich
On those cold rainy evenings when I want something hot and indulgent without cooking a full meal, this sandwich is my hero. I pile chicken pastrami (or even leftover tandoori chicken works!), sauerkraut, loads of cheese, and that creamy thousand island dressing between buttered bread and press it on the tawa till it’s golden and melty. One bite and the whole family goes quiet because it’s just that good. My husband says it tastes better than the huge sandwiches he had in Delhi’s expensive cafes.
Why it feels special:
- Proper deli taste at home for ₹150 per person
- Takes literally 10 minutes start to finish
- Leftover filling becomes killer breakfast toast
- Perfect rainy-day mood-lifter

11. One-Pot Quinoa Chicken
This is the healthy dinner that doesn’t feel like punishment. I throw chicken pieces, quinoa, tomatoes, corn, black beans, little taco seasoning, and water in one pot and let it simmer. The quinoa drinks up all the flavor and becomes so tasty that even my husband who usually says “yeh healthy cheez nahi pasand” finishes two big bowls and takes the rest for office lunch. It’s become my favorite way to sneak in protein without anyone complaining.
Why it’s a weeknight savior:

12. Mary Pat’s Crunchy Tuna Melt
I discovered this recipe on some random Facebook group and now my family won’t let me make regular tuna sandwich ever again. You mix the tuna with mayo, onions, pickles, little mustard, make the sandwich, but here’s the magic spread mayonnaise on the outside and press crushed potato chips into it before frying. The crunch is unreal, the cheese melts perfectly, and dinner is ready in ten minutes. My daughter says it’s the best thing I’ve ever made.
Why it’s pure genius:

13. Greek Lemon Chicken and Potatoes
This one-pan wonder makes my kitchen smell like a Greek island every single time. I marinate chicken thighs in lemon, garlic, oregano, dahi, and olive oil, throw in potato wedges, and roast everything together till the chicken skin is crispy and the potatoes are lemony and soft inside. My kids say it tastes like “holiday wala chicken” and clean their plates without me asking twice. Even guests think I ordered from some fancy place.
Why it’s always a hit:
- Smells better than any room freshener
- Chicken falls off the bone, potatoes drink all the flavor
- Minimal chopping, maximum praise
- Everyone fights for the crispy lemony potatoes
Greek Roast Lamb and Potatoes
Equipment

- 1 Large Mixing Bowl
- 1 Whisk
- 1 Slotted Spoon
- 1 Meat Thermometer Essential for accurate doneness
Ingredients
Main
- 1 large orange juiced
- 3 tablespoons brown mustard or more to taste
- 3 tablespoons olive oil
- 4 teaspoons dried oregano

- 5 cloves garlic
Instructions
- Preheat oven to 375 degrees F (190 degrees C).

- Cut slits into the lamb meat, and stuff the garlic cloves into the slits. Rub remaining orange juice mixture from bowl all over the lamb, and place the lamb on top of the potatoes in the roasting pan. If there’s any remaining orange juice mixture, pour it over the lamb.
- Roast in the preheated oven until the potatoes are tender and the lamb is cooked to medium, about 1 hour. A meat thermometer inserted into the thickest part of the meat should read 140 degrees F (60 degrees C). Check every 30 minutes while roasting, and add 1/4 to 1/2 cup of hot water if you find the potatoes are drying out. If the lamb finishes cooking before the potatoes, remove the lamb to a cutting board or serving platter and cover with foil while the potatoes continue to bake in the oven.
