The perfect summer comfort food is this Spicy Grilled Cheese Sandwich with jalapeño, melty American cheese, toasted white bread! A delicious vegetarian dinner; alternatively make it vegan using vegan cheese!

Every now and again I have a taste for a gooey, melty toasted grilled cheese sandwich. For “comfort food,” they strike all the correct notes; in the warmer months, I enjoy keeping them light by serving them with crisp greens or a cool summer salad.

How to Make French Onion Grilled Cheese

Heat a large skillet over low heat. Spread butter or margarine onto one side of two slices of bread. Place both pieces buttered side down in the skillet. Lay a slice of cheese on each one, and top with slices of tomato, onion and jalapeno. Butter one side of the remaining slices of bread, and place on top buttered side up.
