At Costco, which is the place to stock up on stuff, some of the things stocked up can last for months. For people with a life full of chores, making mealtimes easier helps everyone. Costco has stepped up their game in the prepared foods section.

Many shoppers know the legend of the five-dollar rotisserie chicken, yes. But the prepared foods section has other prepared meals worth checking out. You can find fast food like burritos and tacos here. There are also some fancier options, like salmon with herb butter. Most of the food they sell is by weight, so prices are usually more affordable.

The same cannot be said for the famous chicken, which is fixed and inexpensive. Costco offers a wide range of foods for many tastes, needs and budgets. For years, I’ve been wandering these aisles, and I wanted to know what lived up to the hype. After looking at some of the popular choices and trying them out for myself, it’s clear that some of them are true. There are quite a few foods that deserve to be on a regular shopping list.

Rotisserie Chicken

The rotisserie chicken priced at $4.99 is truly famous. Before becoming a member, I knew that its price was near mythical. This one is sold at a loss by the company, which is why it is such a sensation. While this one is already well known to a wide range of customers, I decided I wanted to buy it for a full a review.

For a long time, I wasn’t sure if people were raving about it just because of its price or because of its flavor. When I finally got one, all doubts immediately dissipated. You feel an indescribable sense of satisfaction when you take a piece of chicken out of the warm package. It also seems to make more complete meals as a protein that has already had a base of flavor.

Chicken Street Tacos

I schedule one meal a week for Mexican food, and this time I’m going to try it with CostcoChicken Street Tacos. This kit usually has enough tacos to make 12. The package provides the basics like corn tortillas and pre-cooked chicken. There is also shredded cheese, crispy cabbage, salsa and cilantro lime aioli.

The package says 12 tortillas, but I prefer to use 2 tortillas together. Even though there were fewer tortillas, it was still filling for more than one person. Honestly, my favorite was definitely the Cilantro Lime Sauce.

It adds a creamy flavor and balances the saltiness nicely. The sauce inside paired perfectly with the tortillas.

For a quick to assemble, easy to enjoy meal, this is a good set. It’s filling and has a relatively balanced amount of protein, veggies, and carbs in it. It’s great for one person or for the whole family to use as a snack, and the price point of around $4.99 per pound is a great selling point in itself. The overall flavor and convenience make it a favorite and recommended.

Meatloaf with Yukon Gold Mashed Potatoes
Truffle Mashed Potatoes: Creamy, buttery and decadent | FMT, Photo by freemalaysiatoday.com, is licensed under CC BY 4.0

Costco has a Meatloaf with Yukon Gold Mashed potatoes, a meatloaf and mashed potatoes is a classic homemade favorite. Based on that sentiment, I was intrigued by Costco’s version.

I opened it up to find preformed meatloaf in each container, coated in a rich red sauce. It also comes with a generous serving of creamy mashed potatoes. The potatoes are usually drizzled with two pats of butter, which melts nicely after an hour in the oven.

This meal doesn’t contain vegetables, but it’s mostly easy to make. There’s no reason you can’t pick up some green beans on the go, right? Or pair them with a simple salad and you have a nutritionally balanced dish.

As for the meatloaf itself, you can be sure that every bite was delicious. However, the meatloaf itself seemed slightly under-seasoned to me. The meatloaf without the sauce was perhaps only average.

Stuffed Bell Peppers with Ground Beef and Rice

There is another Southeast Asian dish to recommend, Stuffed Bell Peppers with Ground Beef and Rice. this dish involves hollowing out bell peppers and putting in a filling. The filling usually includes meat, vegetables, and sometimes cheese. Done right, they can be a nutrient-dense option and potentially lower in carbs.

The standard package of this quick meal from Costco comes with six stuffed peppers, each filled with a mixture of mostly ground beef and rice. There’s also a little bit of cheese in there, which is a little bit of a surprise. These chili’s have the flexibility to be used as a staple, and a pair per person should be enough to fill you up. Or as a substantial side dish that pairs easily with other things.

Unfortunately, in my experience, these particular stuffed peppers didn’t live up to expectations. They have a fairly bland flavor, mostly because you have to add hot sauce to each bite to make them interesting. Even with the hot sauce, they still didn’t become really exciting.

Salmon Milano with Basil Pesto Butter

Next up is a quick fish recommendation. To be clear, I generally don’t like cooking fish dishes. But the consistently positive reviews I’ve heard about this dish caught my attention. Plus the tantalizing sound of “basil pesto butter” was enough to draw me in.

So I tried this Salmon Milano with Basil Pesto Butter. only I found that each packet contains only three salmon fillets, which is a bit small. I was told that it usually takes 30 minutes in the oven to fully cook. The smell of salmon wafting through my apartment while I was cooking was fantastic.

When it was served, I was thinking how delicious this dish must be. Even though I’m always hesitant to cook fish, I was pleasantly surprised by how delicious they were. The basil pesto butter melted perfectly over the fish. The butter added a rich, creamy flavor that made the salmon feel surprisingly inviting and delicious.

This dish really goes beyond simple fish nuggets. So my biggest criticism of the product is not the flavor, but the contents. The package only includes the salmon itself, which is true. Therefore you need to add sides to make it a complete meal, that’s a fact. I think a side dish could be fluffy rice or a simple vegetable. But luckily, both are available at Costco.

Take-and-Bake Margherita Pizza

Then there’s the classic Italian food – pizza. Costco sells several types of pizza in addition to the sliced pizza sold in the popular food court. One such type is the classic Margherita pizza, a favorite of many.

Naturally, I was eager to try Costco’s classic pizza for myself. Initially through the clear window on the box, it’s all a sight to behold. One can see a thick layer of shredded cheese topped with tantalizingly fresh mozzarella. There was also a dollop of fresh pesto that felt great.

I personally feel that this pizza is a classic and reliable choice for pizza lovers. Partly because its vegan nature makes it an audience that will be broader, and secondly because it’s delicious, this square pizza is very versatile in the way it can be sliced. It can easily be divided into eight pieces or cut to suit your needs.

  • pound  pollo para asar seasoned, boneless, skinless chicken
  • onion diced
  • 1/2  cup  chopped cilantro
  • 8  corn tortillas

Instructions

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Grill chicken, turning occasionally, until juices run clear and chicken is no longer pink at the center, about 7 minutes. An instant-read thermometer, inserted near the center, should read at least 165 degrees F (74 degrees C).
  • Heat corn tortillas until soft and pliable in the microwave, about 1 minute. Top with chicken, onions, and cilantro.

Notes

I go to my local Mexican Market and buy “pollo para asar” which translates to “chicken to grill.” This chicken is seasoned and ready to grill. These delicious tacos are easy to make and topped with cilantro and onions. I serve them with guacamole, salsa and fresh lime wedges on the side.
