On a lazy morning like the weekend, opting for a homemade breakfast will give you a sense of comfort. Imagine the aroma of freshly brewed coffee intertwined with the scent of freshly baked buttermilk cookies, and even the most ardent sleeper will be yanked out of bed by the scent. Today, we’re delving into this classic convenience breakfast that’s been the choice of many: cookies and gravy with a hearty side of potatoes and eggs.

The sausage sauce, a family legacy passed on from my mother, is the secret to this breakfast. You will have never tasted this thick and rich sauce before. Thyme, rosemary, and a little red pepper are added to a classic pork sausage, flour, margarine and cream combination.
Then, to go with the sauce, homemade or tailored buttermilk rolls are presented. Making these rolls without any preparation sounds daunting, but the results are well worth it.
Next up, the star of the day: potatoes and eggs. The roasted potatoes add a nice textural element – a bit of earthiness, if you like – that contrasts with the rich, creamy gravy on top. Finish it off with eggs, tossed to your preferred level of doneness. Whether scrambled, fried or poached, the eggs blend just right with the gravy and cookie.
In addition to cookies and gravy, I’ve tried cookie and gravy casseroles that pair these ingredients with eggs and cheese for a flavor like no other. One good thing about casserole dishes like this one is that they’re easy to make for a large group, or on mornings when you want a little more but don’t want to deal with single servings.
This is a versatile sausage gravy and cookie recipe, hence keep in mind. You might try replacing the sausage with bacon or another minced meat to create a taste that fits you better. Making the gravy with whole milk or 2% milk instead of half-and-half yields a creamier texture without increasing calories.
